White Chocolate Cranberry Squares

Here’s a recipe I improvised on Saturday… It’s a wild variation of my favourite brownie recipe.

I’ve tried “whities” before but I found them a bit too sweet. The cranberries add some sourness that goes SO well with white chocolate… Also, I didn’t use a full cup of sugar but I can’t say for sure how much exactly went in… I left out maybe 1/8 cup. Try it out and see how you’ll like it.

These actually taste better chilled – if you can wait that long…

You’ll need:

60g white chocolate
1/3 cup butter
1 cup sugar
2 large eggs
1 tsp vanilla
1/2 cup all-purpose flour
1/2 tsp baking powder
pinch of salt
1/2 cup dried cranberries

Melt the chocolate and butter together. Stir in sugar and allow to cool for 5min.

Beat in the eggs with a mixer. Add vanilla and continue beating until the batter is light and fluffy-ish.

Shift together flour, baking powder and salt. Add into the chocolate mixture.

Pour the batter into greased 9×9″ cake pan. Sprinkle the cranberries on top.

Bake in 350F/180C for about 30min. Enjoy!

  2. Karpalo-kinuskikakku

    200 g voita
    2dl sokeria
    2 munaa
    4 dl jauhoja
    1 tl leivinjauhetta
    1 tl vaniljasokeria
    ¬Ĺ dl hasselp√§hkin√§- tai mantelirouhetta
    1 dl maitoa

    Vatkaa voi ja sokeri vaahdoksi, lisää munat yksitellen hyvin vatkaten, sekoita kuivat aineet keskenään ja lisää vaahtoon vuorotellen maidon kanssa.

    Täyte: 200 g karpaloita (4 dl)
    1 rkl perunajauhoja
    2 rkl sokeria

    Sekoita perunajauho karpaloihin. Levitä osa taikinasta irtopohjavuokaan (halk. 24 cm), levitä päälle karpalot ja sokeri, nostele pinnalle loput taikinat. Paista alatasolla 200 asteessa 30-35 min. Anna jäähtyä.

    Kuorrutus: 2 dl valmista kinuskikastiketta
    tai: 2dl kuohukermaa
    2dl fariinisokeria
    1 rkl voita

    Keit√§ kermaa ja sokeria teflonkattilassa n. 15 min. Ota liedelt√§, lis√§√§ voi, sekoita tasaiseksi anna j√§√§hty√§ ennen kuorruttamista. Voi koristella karpaloilla…
